Many people see the Highlands as ‘postcard animals’, and fail to realise that Highland Beef is the finest beef produced in the United Kingdom.  Highland Beef is generally not sold on a commercial basis, so few get the opportunity to taste it.  It is lean, but well-marbled, succulent and very flavourful.  The Scottish Agricultural College has analyzed the beef and found it lower in cholesterol and high in omega 3.  All this goodness is probably due to the nature of the beast, slow growing with a natural grass diet.  Continental cows are often intensely-reared on an ‘unnatural’ diet, ie., fattened up to get to market as quickly as possible.  You just don’t rush a Highland cow!
